Chipotle Fish Tacos with Avocado Pineapple Salsa

Looking for a simple weeknight meal? This is the one for you! This fish cooks FAST! And the avocado and pineapple salsa can easily be made while your fish is cooking. Then pat yourself on the back, because even though you were time-strapped, you still made dinner!

For the fish:

1 tablespoon extra-virgin olive oil

1 chipotle chile canned in adobe, roughly chopped

2 teaspoons adobo sauce

2 teaspoons maple syrup

4 (4- to 5-ounce) tilapia fillets

¼ teaspoon kosher salt

For the salsa:

1 cup fresh or canned pineapple, chopped

½ small red onion, chopped

¼ cup fresh cilantro, chopped

½ large red bell pepper, diced

1 avocado, seeded and diced

Juice and zest of 1 lime

¼ teaspoon kosher salt

For the tacos:

8 (6-inch) flour tortillas, warmed or large lettuce leaves, such as romaine
